Ingredients

  • ½ cup gluten-free flour or all-purpose flour
  • ½ teaspoon black pepper
  • 1 ½ lbs chicken breasts
  • ¾ teaspoon salt
  • ½ cup plain breadcrumbs
  • 2 large eggs
  • 3 table spoon olive oil
  • ⅓ cup grated parmesan cheese
  • 6 oz mozzarella cheese
  • 2 cups marinara sauce
  • 6 fresh basil leaves to garnish

Instructions

  1. First of all, use ½ teaspoon black pepper and ¾ teaspoon salt to season the chicken pieces.
  2. Then you need to cut the pieces, but do not cut all the way through.
  3. Now, use 2-3 tablespoon mozzarella cheese for stuffing the pieces. Then you need to close the edges to seal.
  4. Take three individual bowls. Take the first bowl and add ½ cup flour.
  5. You need to beat 2 eggs in the second bowl with a hand whisk or fork.
  6. Add ⅓ cup parmesan cheese and ½ cup bread crumbs in another bowl to mix them.
  7. At a time, you should work with one chicken breast. You will need to dredge the stuffed chicken breast in flour and remove the additional flour.
  8. Now dip the piece into the whisked eggs and coat in breadcrumbs properly.
  9. Take a big pan to heat at medium temperature. To coat the pan properly, add 3 tablespoons of olive oil.
  10. Keep the breaded chicken in the hot oil and cook for 4 minutes on each side to get a golden brown look.
  11. Now add 2 cups of marinara sauce to the chicken and place them in the middle.
  12. You can sprinkle the leftover mozzarella cheese on the chicken to bake for 15-20 minutes at 400° Fahrenheit.
  13. While giving a final bake, keep it uncovered.
  14. When the dish is ready, garnish it with fresh basil.
