  • Create a breading station for the fish. In one bowl, add the flour. In the second, whisk together the eggs and salt.

  • The first step is to coat the fish in flour.
    So, add the beaten eggs to the batter.
  • Last but not least, coat in panko.

  • Bake for 10 minutes at 400 degrees. Turn the fish over very carefully. Cook the meat for three minutes until it comes golden brown.

  • One small lemon
  • 2 tbsp (30 mL) olive oil
  • 1 tsp (5 mL) Dijon mustard
  • 1 tsp (5 mL) honey
  • 1 tbsp (15 mL) chopped chives

Preparation

Before you start, you'll want to prep your fish. Start by removing the skin from the cod and patting it dry with a paper towel. This will help ensure it doesn't get soggy in the air fryer.

Next, cut off any pin bones from your fillet with kitchen shears or a knife if any bones are sticking out (you can tell if there are because they'll look like little silver spikes). If you don't remove them all, they may cause your fish to break apart while cooking or turn into an unpleasant texture when eaten. Once this is done, set aside until later in step 2.

Cooking process

First, season with salt and pepper on both sides.

Place it in the air fryer basket and cook for 10 minutes at 180 degrees Celsius (with a fan-forced air fryer, you can cook at 180 degrees Celsius without oil). Cook until the fish is golden brown. Check that it's cooked through by inserting a knife into the thickest part of the fillet – if there is no resistance, then your cod is ready to eat.

  • Panko is a light Japanese breadcrumb suitable for air-frying. Panko is distinct from traditional breadcrumbs since they don't have crusts, allowing them to cook without absorbing oil.
  • Salt and pepper are needed to season fish. However, salt and pepper alone will season a fish fillet well.
  • Eggs help fish chunks hold panko breadcrumbs. The egg "sticks" the panko to the fish, giving it a crunch. Without the egg, the panko won't stick to the fish.
  • Garlic powder, cayenne pepper, chili powder, onion powder, and dried oregano.
  • Spray oil works well in air fryers. I spray extra virgin olive oil or vegetable oil.

The Cooking Process

  • If you use frozen fish, let it thaw before you use it. Then, use salt to refresh the fish for about thirty minutes.
  • Salt and pepper flour and breadcrumbs. Add garlic, onion, chili, and smoked paprika. Or use aromatics. Favorite: fresh dill.
  • Dredge the fish in the flour using the dry and wet hand method. After dipping in egg, breadcrumbs.
  • Once coated, place the fish sticks in the Air Fryer basket without touching them. Spraying them with oil makes them crispier and adds color. Ten minutes at 400F (200C), then 5 minutes more.
  • Serve fish sticks with fresh lemon juice.
  • The fish sticks could be put in the freezer. If you want to freeze them, do it right away while they are still raw. 15–18 minutes at 400°F (200°C) from frozen.

The Dipping Sauce for The Fish Sticks

It's a classic and undoubtedly the most incredible sauce that can be served with fish fingers (I highly recommend that you create your own at home).

You could also just dip them in mayonnaise, ketchup, or mustard.

Tips For Dipping and Breading

  • Breading anything can be messy.
  • One hand: Coat cod with flour using one hand. Shake off the extra egg with the same hand. Then add panko.
  • Use your dry hand to pat panko into the cod. Well-coat it. Put in air fryer basket. Repeat.

I adore air fryers because it's hard to mess up food. Air frying makes making delectable meals easy.
Too close together, the fish will simmer instead of "fried."

Good cod fillet: Fine fresh, or frozen. Too thin, and the fish won't crisp before drying out. Thaw frozen fish as directed. Dry both with a paper towel. This crisps the crust.

Oil: Using oil can make it crispy—spray oil. Non-stick sprays like Pam include ingredients that will damage your air fryer.
